Here are links to websites that will take you further than we can into the world of grass-fed meat and sustainable, local agriculture:

http://www.eatwild.com/ All you need to know about grass-fed is found here. Links to farmers in fifty states and in Canada.
http://www.michaelpollan.com/omnivore.php Author Michael Pollan analyzes four meals grown four different ways: industrial, organic, pasture-raised (aka "beyond organic"), and hand-gathered. Read this and you'll never look at a McBurger the same way again.
http://www.animalvegetablemiracle.com/ Author Barbara Kingsolver and her family's describe their year eating only locally grown food. Precise, funny, and touching. Good recipe ideas, also.
http://www.organicconsumers.org/ This non-profit out of Minnesota has its ear to the ground about all things involving organic food, sustainable farming, and healthy living. Grass-roots style and quite comprehensive.
